I’m not really a cracker person.

I think maybe it’s because I’m not really a cheese person. Apparently they go really well together.

I like cheese when it’s stirred into something, or melted on top of something, but I don’t like cold cheese. Anyone else with me? I don’t know what it is about cold cheese.

But heck, on a pizza, or lasagna? Load it up. The more the better.

My mom used to make these pizza crackers for our birthdays every year. I remember they were always a big hit with our friends. And why not? Spicy pepperoni, sweet tomato sauce and gooey cheese. Isn’t that what kids are all about?

I don’t know if I’d ever made these myself before my daughter’s second birthday. I guess I had always connected them to childhood birthdays, and it’s been a long time since I had a childhood birthday.

But now I have a kid. And when I was figuring out what I was going to make for her birthday party I thought of these right away: (a) because they’re delicious and (b) because it’s tradition!

So whether you’re celebrating a birthday or not, and whether you’re over the age of 12 or not, these are such a perfect snack! You could pair them with a spread of fruits and veg and call them lunch, too. Obviously, the measurements don’t have to be exact and you can easily make more or less to suit your needs.

Pizza Crackers

Ingredients

  • 10 Ritz crackers original, or mix it up
  • 10 tsp pizza sauce
  • 10 thin slices of pizza pepperoni
  • 1/2 cup shredded cheese

Instructions

  • Preheat the broiler.
  • Line a baking sheet with tin foil. Spray with non-stick spray. Place crackers on baking sheet.
  • Top each cracker with a piecec of pepperoni and spread with about 1 tsp sauce. Sprinkle with cheese.
  • Broil for 1-2 minutes, just until the cheese is mellted. Serve immediately.

    I made these for my book club last night and everyone loved them. However, they stuck to the tin foil, so I recommend lining the pan with parchment paper.

    Hi, just now came across this! Looks like something the grands would love!!. Have a question tho. In one picture it appears the pepperoni is cooked prior to putting the cheese on but that step isn’t mentioned in the instructions.
