This Berry Lime Slush is a cold, frosty summer drink that will keep your thirst quenched! It’s great for storing in the freezer and pulling out for surprise visitors, picnics and barbecues!

Cold, icy drinks are what summer is all about, right?

My mom used to make slush around the holidays, which might seem like a strange time considering that it is absolutely freezing here. But since this Strawberry Lemon Slush is pretty much the only recipe we use, I really wanted to experiment with another variation.

And since I know you love lime and berries, this was a natural second!

This Berry Lime Slush recipe is super simple and uses just a few ingredients — it is really just a combination of lime juice, berry punch, pureed strawberries and some sugar. I know the sugar might seem unnecessary, but it helps to keep the frozen mixture a little… less frozen? Sugar doesn’t freeze which means that you won’t have to wait quite as long to get a scoop out of the pail. And when the temperatures start to rise, this is important!

I highly recommend freezing the slush mixture in smaller containers so that you don’t have to take out the whole batch every time you just want one serving. You could use small 1 cup containers or even small freezer bags would work fine if you zip them up tight so they’re not leaking. This also means that you don’t have to wait as long for it to that partially, which, like I said, is important when it’s hot out!

If you want to lighten things up, feel free to mix with a sparkling water instead of soda.

Berry Lime Slush Recipe

This Berry Lime Slush is a frosty, refreshing summer beverage!

Ingredients

  • 1 can lime concentrate
  • 1 can berry punch concentrate
  • 2 cups fresh or frozen strawberries
  • 1 cup granulated sugar
  • 10 cups of water
  • Lemon Lime soda or sparkling water

Instructions

  • In a blender, combine concentrates, strawberries and sugar and puree until smooth.
  • Stir in water (this recipe will fit perfectly in a 4L ice cream pail if you have an empty one laying around).
  • Freeze. I like to do this in smaller 1-2 cup containers so it’s easy to take out 1 or 2 servings, but you can freeze it in one large batch if you desire.
  • Remove from the freezer 1-2 hours before serving (depending on the size of your containers — smaller will thaw more quickly). Spoon into glasses and fill cup with lemon lime soda or sparkling water.

Starts with a cake mix or scratch vanilla cake, this poke cake is covered in homemade lemon curd (or use store bought for a shortcut) and easy meringue — a great light dessert for Spring or Summer!

Soooo….. I like cake.

Swimsuits? Not so much. Turns out I’m not 20 years old anymore. See how priorities change?

Thankfully, there is cake out there for people who also like swimsuits. Like this Skinny Lemon Meringue Poke Cake.

Now, I’m going to tell you right off the bat that I didn’t do any calorie-calculating for this cake. But if you cheat and make it with a cake mix like I did (don’t look at me that way — I’ll also share with you my favorite scratch vanilla cake if you want to go that route), you start off with 160 calories per piece. Lemon curd? Mostly lemon juice and eggs (hey — protein!) and a ¾ cup sugar divided over the whole cake. And meringue is such an awesome way to add a light and fluffy topping to any cake without the calories of whipped cream or frosting. Max? 275-300 calories would be my guess.

Like I’ve explained before, I’m not really into calorie counting — I just like to swap out the things I’d really like to eat (like cake) with healthier and lighter versions of them. I don’t like to include calorie calculations because it can really depend on the brand of ingredients you’re using, and a calorie count wouldn’t be accurate for everyone. But if you’re a calorie counter, don’t take my word for it. There are some great online calorie calculators out there like this one.

I just love citrus anytime of year, but especially in the summer! There’s just something so light and refreshing about a lemon dessert.

If you don’t want to use cake mix, check out my favorite vanilla cake recipe here! (It makes quite a large cake, so you might want to divide the batter between 1 9×13″ pan and about 6 cupcakes).

To keep things even easier, you can use store bought lemon curd.

Ingredients

Cake:

  • 1 vanilla cake mix
  • 355 ml can diet lemon lime soda

Lemon Curd:

  • 2/3 cup granulated sugar
  • 1/8 cup grated lemon zest
  • 4 egg yolks
  • 3 whole eggs
  • 3/4 cup lemon juice
  • 4 tbsp butter

Meringue

  • 4 egg whites
  • 1/4 tsp cream of tartar
  • 1/8 tsp salt
  • 1/2 cup sugar

Instructions

  • Cake:Preheat oven to 350 degrees F and lightly grease a 9×13″ pan. Combine cake mix and soda in a large bowl until smooth. Pour into prepared pan and bake for 25-30 minutes or until a toothpick comes out clean or with moist crumbs (not batter!). Set aside to cool to room temperature. Poke holes into cake with the end of a wooden spoon or something of a similar size.
  • Lemon curd:In a medium pot, combine sugar, zest, yolks, eggs, and lemon juice with a whisk until smooth. Cook over medium heat, whisking, until thickened (about 3-5 minutes).
  • Pour over cake while curd is still warm.
  • Meringue:In a large bowl, combine egg whites, cream of tartar and salt. Beat with an electric mixer on high speed until soft peaks form. Slowly add sugar and continue beating until stiff peaks form (see picture below).
  • Preheat oven to 400 degrees F. Spread meringue on top of cake and bake for 10 minutes or until golden brown.
  • Cool completely in the fridge before serving.

This slush is full of strawberry and lemon flavor and is so refreshing! Keep it in the freezer and pull it out for your next barbecue or potluck!

I’m a big fan of fruity drinks.

And summer, strawberries, lemons, and stripey straws.

Deck-sitting, flip-flop wearing, and ice cream.

I was tempted to just end this post right there and take a nice tall glass of slush out onto the deck and watch my husband shovel dirt, but I wouldn’t want to halt progress.

We’ve still got “a lot” of summer left (in Manitoba, a lot of summer is maybe a couple months), but I have to say – I’m obsessed.

I have this theory that some nice weather and a good run around outside makes 3 year olds a little more normal. I know when my girl is cooped up inside, she gets a little bit crazy.

A little bit more crazy than your average 3-year-old crazy.

But she could hang around all day outside, even if she’s riding along in the tractor with Dad for hours, or shovelling dirt, or collecting rocks – as long as she’s outside, she’s perfectly happy.

Which leaves me a couple quiet hours in the evenings to sit around, drinking some slush, inside, writing this post about how it’s so nice to be outside in the summer. 🙂

This slush is a recipe I got from Taste of Home, and I’ve been making it for years. I kept the “sensational” from its original title (because it is), but I changed up the juice flavors a bit to suit our tastes. It was time to share! I love slush because you can make it ahead of time, and pull it out for a last minute barbecue or get together. It’s so refreshing and fruity when it’s hot outside, and you can mix up the jello, juice, and fruit flavors to make your own combo!

  • 1/2 cup granulated sugar
  • 3 oz package strawberry jello powder
  • 2 cups boiling water
  • 1 can berry punch frozen concentrate thawed
  • 1 can pink lemonade frozen concentrate thawed
  • 2 cups diced strawberries
  • 1 cup unsweetened pineapple juice
  • 1 2 L bottle of lemon-lime soda

Instructions

  • In a large bowl with a lid (I use a clean ice cream pail), combine sugar, jello powder, and boiling water and stir until sugar and jello are dissolved.
  • Stir in both cans of frozen concentrate.
  • In a blender, puree strawberries and pineapple juice. Add to your bowl and stir well.
  • Cover and set in the freezer overnight to freeze completely. Remove from the freezer 45 minutes before you wish to serve.
  • To serve, spoon some slush into a glass and top with lemon-lime soda.

Notes

*You could freeze in smaller portions if you don’t wish to use it all at once.
